Crunchy Thai Salad

Lime and mango are back in season in Italy and I couldn’t be happier. This combined with the fact that I have yet to find a real authentic Thai restaurant in Florence means that I am back to making all sorts of Thai inspired meals at home again. This crunchy salad is honestly  irresistible and could easily become your new obsession as it is mine. Each bite packs a powerhouse of fresh flavors and nutrients.  The creamy peanut butter dressing will have you day dreaming of  palm trees and white sand beaches of Thailand. 

If you’re looking for a quick, wholesome and exciting meal that you can enjoy for dinner or pack for lunch the next day, this salad should make you very happy. A few simple chops with your chef’s knife and a blend of the sauce, and you’ve got your next veggie packed meal ready in just a few minutes.  To me, this salad screams springtime with its rainbow of colors and tropical mango.

Not only is this Thai salad tasty, but its also packed with some powerful super foods.. cabbage, red bell peppers, carrots, green onion, and lime juice so you can savor every bite knowing that you are being good to your body.



2 cups mixed greens or kale (thinly sliced)

2 cups cabbage thinly sliced ( mix of red and green cabbage)

1/2 cup red bell pepper thinly sliced

1/2 cup carrot shredded

1 mango thinly sliced

1/4 cup cilantro chopped

handful of mint leaves (sliced)

1 tablespoon green onion chopped

1/4 cup roasted peanuts


Peanut Dressing:

1/3 cup natural creamy peanut butter

2 tablespoons fresh lime juice

3 tablespoons honey or pure maple syrup

1 1/2 tablespoon rice wine vinegar

1 1/2 tablespoons low sodium soy sauce

1 teaspoon sesame oil

1/2 teaspoon fresh minced ginger

1 clove of garlic (roughly chopped)

1 to 2  tablespoon water


Thai Salad:

In a large bowl, add all the salad ingredients except the peanuts. Set aside while you make the dressing.

Peanut dressing:

In a blender add all the dressing ingredients. Puree until blended and smooth.. about 1 minute. You can also whisk the ingredients together in a medium sized bowl. Add more water if needed to thin out the dressing. Season with salt and pepper as needed.


Gradually add enough dressing to coat the salad, toss to combine.. Drizzle with more dressing if there is any left, top with the roasted peanuts and enjoy. How easy is that? Buon appetito my friends.
